Dear Mark,

If there was ever any doubt that the real Kansas summer would actually come, those doubts are dismissed! It is HOT!! Thankfully I haven't had to water my lawn yet, though. We hope your summer is going well. We are very excited after returning from our Scrapbook Tradeshow (CHA) in Chicago. We ate a lot of good food, including the best pizza I've ever had, and had opportunity to relax a little as well. We came back with a lot of new ideas, and are excited about the changes coming to the store. Most of the changes are on the scrapbook side, but a few will be on the coffee side. Once again we appreciate your loyal support. Without our faithful customers and friends Scraps wouldn't have the same comfortable atmosphere, which is what we really strive for. We want to be a place where you can come, unwind, and escape the cares of the day (you may have noticed the intentional absence of a clock in Scraps). So, kick back, relax, cool off, and enjoy the rest of your summer. It'll be freezing before you know it! (And all the allergy sufferers say "amen"!)
What Makes Good Coffee?
This is the second in a 6 part series on what differentiates good coffee from bad, or even great coffee from good. If you miss future editions for any reason, all 6 parts will be posted on the web site. These articles are intended to be brief overviews, and future newsletters will likely go into greater detail on these items.

Processing
Coffee beans are processed using one of two basic methods, wet processing or dry processing. Wet processing entails soaking the fruit of the coffee tree in water, and allowing the pulp to separate from the seed that way. The pulp is then separated from the bean, and used for fertilizer on the plantation. The other method involves letting the fruit dry in the open air, and then removing the dried pulp. Depending on the care taken during processing, either method can produce fine quality coffees, although dry processing tends to provide less consistency and more earthy flavors to the coffee.

Live Music at Scraps II

On July 18 Scraps hosted its second live music event, and once again the entertainment was excellent. Ezra Hallman and Kevin Buster were joined by Jacob Hallman, and played a variety of jazz selections, as well as some original music. There was also an encore performance of John Lennon's "Imagine", with Ezra singing. We've had requests for more performances by these guys, but unfortunately for us they are all going to college for the fall! We are hoping to have a Christmas concert with all three, so stay tuned!

New Menus!!
Recently new menu boards were hung at Scraps. I don't know if anyone noticed the problems with the old boards, but they were glaring to me. Mocha was spelled "Mocah", Four Berry Blend was "Four Berry Bland", and a coffee airpot was an "airport". There were other mistakes also, but those were some of the big ones. When I first saw the mistakes I ran to my computer to check my Word document that I mailed the printer, and much to my relief the mistakes were not mine. Anyway, we had our signs remade, and they are much better. They also have the additions of our new flavored syrups, so that is nice. Thanks to Mark's Custom Signs in Great Bend for a great job (Mark didn't do the first signs)!

August 18 - Moonlight Madness, and Scraps 1st Annual Garage Sale. We'll have smoked burgers
and hot dogs starting at 3:00. Don't miss this food, because it may the best you've
had all summer! For those who may know him, John Wilhite will be doing the smoking,
and Tayleene will make the sides. See you there! We'll be open until Midnight. We
will also be having a sale, with a 20% discount on all Scrapbook products. We must
make room for new product!

New (Almost) Referral Campaign
We know we have received a lot of word of mouth advertising since we opened, and we thank those of you that have helped spread the word. We have wanted to do something to show that thanks, and so we are rolling out our Referral Campaign. This is (Almost) New, in that we have had referral cards, with a drawing to be held each month, but never have publicized it. So, consider this the publication! Here's how it goes. You stop by the store and pick up referral cards, as many as you'd like (but be realistic, don't take 1000!). You write your name on the front and hand them to your friends. Any card with your name on it will be entered into a monthly drawing for a prize (to be determined each month). In addition the person bearing the card will receive a 10% discount on any purchase. So, stop by and pick up your cards today!

Our last newsletter promised nutritional supplements as additives to our smoothies, and this is still in the works. Sorry for the wait, but we will get them here. I have found that the Smoothie's by themselves are a pretty fair meal replacement, especially with a muffin (banana nut is my currrent favorite).
